Best vegan lasagne recipe

SUPER-QUICK VEGAN CARBONARA

 A dish every bit as sweet, satisfying and smokey as the original – with the bonus of never being stodgy.
​And it can be ready in as few as 15 minutes. A hit!


THE INGREDIENTS
SERVES 3+

1 pack of plant-based lardons (or Quorn vegan ham slices)
Gluten-free/egg-free tagliatelle or spaghetti
Pot of vegan single or double cream, like Oatly or Elmlea
Handful of mushrooms, chopped 
White onion, chopped
Grated vegan cheese or nutritional yeast flakes 
Few sprigs of fresh parsley and/or sage, chopped (optional)
1-3 cloves of garlic (or garlic granules)
Salt and pepper.
  1. Chop the onion and garlic finely and fry in oil on a low heat until onion starts to soften.
  2. Pop the pasta (you choose how much) in boiling water and cook following the instructions on the packet.
  3. Add the lardons and fry until crispy. 
  4. Add the mushrooms and any herbs and fry for another 5 minutes or so.
  5. Drain your pasta thoroughly then drop in the frying pan before pouring over as much cream as you'd like. Tip: Add more than you think you need because the pasta soaks it up.
  6. Stir in the cheese, season and cook for another five minutes or so until the cream starts to brown a little.
TREAT TIP: Serve at once with crispy garlic bread for a perfect comfort food supper.
