VEGAN CHORIZO BOLOGNESE
Who doesn't like spaghetti bolognese? Since becoming vegan I use meat-free mince, of course. Recently I fancied a change and came across these new veggie (actually vegan) chorizo sausages. A quick and tasty meal that could barely be easier.
1. Start boiling the pasta before cooking the sausages (I used 3, enough for two meals) in the oven.
2. When both are ready, cut up the sausages and add to the tomato sauce in a saucepan.
3. Heat to your liking, then pour on the pasta.
4. Sprinkling lots of nutritional yeast flakes or a cheese of your choice really brings this slightly spicy twist on a comforting classic to life.
