Best vegan lasagne recipe

BEST VEGAN LASAGNE

Follow this exact recipe and you should end up with a lasagne so good even ardent meat eaters will want the recipe. The star ingredient is a pre-made bechamel sauce, which means the whole dish can be made and in the oven with 15 minutes! 

THE INGREDIENTS
SERVES 4

1 bag of meat-free mince 
 Small bag of fresh spinach
Large jar of red pasta sauce or similar
Jar of M&S vegan bechamel sauce
Small handful of fresh rosemary
1-2 carrots, finely chopped
Lasagne pasta sheets
Optional: Nutritional yeast flakes
  1. Set the oven to around 180C.
  2. Fry the soy mince in olive oil with the broken up rosemary for 3 to 5 mins.
  3. Add the red pasta sauce and carrots and cook for further 4 minutes or so.
  4. Line an oven dish with the mince, then add a layer of spinach, followed by a single row of lasagne sheets. Top with more spinach, then more mince, then a second layer of lasagne sheets.
  5. Pour/draw the bechamel sauce over the pasta until the whole dish is covered. Generously add a layer of nutritional yeast flakes (it's a delicious cheese substitute of sorts), if using, then decorate with basil or the remaining spinach leaves.
  6. Pop in the oven for 30 to 40 minutes or until gently browning at the sides.
